Coconut Cream Chicken

Ingredients:

500gms Chicken breast fillet

2 Tblsp Olive Oil

1 Onion finely chopped

2 Tblsp fresh red chillies finely chopped

1 Cup fresh basil (any variety) shredded

2 Tblsp fish sauce

1 Tblsp fresh coriander root chopped

2 Tblsp chopped coriander leaves

1 Tsp Sugar

1 cup coconut cream

Method:

1. Cut chicken into 1cm strips, heat oil in wok, add onions and chillies, stir fry until onion is soft

2. Add chicken stir fry till chicken is tender

3. Add basil, sauce, coriander and sugar stir fry another minuet

4. Add coconut cream and stir till heated through

 Serve with rice
