Colourful Caesar Salad
Ingredients:
Selection of colourful Renaissance lettuce leaves
225g bacon
25g butter
15 ml oil
1 egg, poached
2 slices bread diced
6 Anchovy fillets
25g grated Parmesan Cheese
Dressing:
60 ml oil
30 ml vinegar
Salt & peper
5 ml mild mustard
2 cloves garlic, crushed
30 mls chopped parsley.
Method:
1. Wash & place the whole leaves in a bowl
2. Cut bacon into strips and fry in butter & oil until crisp
3. Remove and add the diced bread, fry until crisp
4. Add the bacon & croutons to the lettuce
5. Combine the dressing ingredients, break up the poached egg and add to the salad
6. Toss lightly, with the hands
7. Top with the anchovy fillets and sprinkle over the grated Parmesan Cheese
